Recipe: Shahnai Arhar Dal with a Zesty Twist

This Shahnai Arhar Dal recipe adds a unique flavor twist with a blend of tangy tomatoes, aromatic spices, and a hint of lemon juice, making it a perfect companion for rice or flatbreads.

Ingredients:
  • 1 cup Shahnai Arhar Dal
  • 4 cups water
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, finely chopped
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1/2 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • 1 tbsp ghee or oil
  • 1 tbsp lemon juice
  • Fresh coriander leaves for garnish
Instructions:

Step 1: Cook the Dal:

  • Rinse the Shahnai Arhar Dal under cold water and soak it for 30 minutes.

  • In a pressure cooker, add the dal and 4 cups of water. Cook for about 3-4 whistles, then reduce the heat and simmer for another 5-7 minutes. If using a pot, cook on medium heat until the dal is soft and tender.

Step 2: Prepare the Tempering (Tadka):

  • Heat ghee or oil in a pan. Add cumin seeds and let them splutter.

  • Add finely chopped onions and sauté until golden brown.

  • Add the ginger-garlic paste and cook for 1 minute until fragrant.

  • Stir in the chopped tomatoes and cook until they soften and release their juices.

  • Add turmeric powder, red chili powder, and garam masala. Stir to combine.

Step 3: Combine and Simmer:

  • Once the dal is cooked, add the tempering mixture to the dal and mix well.

  • Season with salt to taste and let it simmer for another 5 minutes to blend the flavors.

Step 4: Finish with Lemon:

  • Turn off the heat and add fresh lemon juice for a tangy kick.

  • Garnish with fresh coriander leaves.
